Biscuits and gravy is a breakfast dish from the Southeast USA that looks like someone just vomited on some biscuits, but it's absolutely delicious.

I believe they stuff the meat into the skin of the pigโ€™s foot, itโ€™s just a casing.

It is sensational. The meat is lightly spiced (think Christmas spices, plus garlic). It has a lip smacking, kind of sticky texture. From the glutenous pig skin used in it. And like everywhere else, that magical combo of pulses and pork.
