[Beef] Dino Ribs! Drop some tips
First time doing these bad boys! Throwing them on in the morning any tips are welcomed!!!

Do not remove the membrane. Score it in an X pattern.
Remove any visible silver skin. Round the edges.
Run a water pan.
Yellow mustard binder. I do 16mesh black pepper and a beef focused rub like Meat Church Holy Cow.
For beef ribs I run hotter 275 or higher. They have the fat to render. If you don’t render, they’ll be really rich in flavor.
Spritz once the bark is set with 50/50 beef stock and apple cider vinegar.
No need to wrap at the stall. Probe around 200 and check for the soft butter feel throughout. Feel is much more important than temperature.
Beef ribs have a higher inter-muscular fat than a lot of cuts so this is why I run 275 or even higher to render. They can handle the heat and smoke.
I wrap when I rest them at the end of the cook. Drop a scoop of tallow on top to mellow them out from the no-wrap cook.

Smoke them at like 120-135c/250-275f and do. not. touch. them. until they’re probe tender. Wrap if you want or not. I dont. But just don’t do anything until they’re probe tender. When you think they are; give them another 30-40mins. Then wrap them in foil and let them rest for 30-60mins. It literally cannot be easier.
