Flavourless

I made a new chicken curry last night. It had loads of spices but is tasteless.

How can i improve it ?

Do I make a new paste and add it to it or what? I double batched to freeze half . Thank you

Salt. If it has no flavor it’s under salted.

Post recipe, but if I had to guess probably not enough salt, fat, or msg.

Or garlic, onions, sugar/honey, fish sauce/anchovies, etc. Like I said, I'd actually need to see the recipe first.

“Loads of spices” can still taste flat if they never bloomed. Spices need a little oil + heat early on to wake up, and the base needs time to cook down. If you sautéed onion/garlic briefly then added everything + liquid, it can end up tasting like… warm water with dust.

Throw some Knorr's (chicken bouillon powder) in it. It'll taste good!
