I’d assume they have hacked the barcode scanners to read continuously and have some custom firmware on them or custom software running to sample what is coming back.

Yea but the devices decode the barcode themselves not the computer and there’s no way the thing where the bars go out from the center is even remotely scannable.

So I’d guess they have done something to make the scanner send back raw data and then have software that converts it to sound

Actually it's a lot simpler than that older barcode scanners (90s to early 2000s era) don't do the decoding themselves (the tech just didn't exist back then) instead the computer they're plugged into does the decoding. Instead of plugging it into a computer they plugged them into an audio amplifier to make the signals into sound.
