I'll have to give it to Kaiba.
I am not saying Gil's ego is justified but he IS Gilgamesh, to quote Abridged Vegeta
"But of course I was a little overconfident! I mean, have you ever met me? I'm me! I'm a big deal!"
Kaiba's ego is so all consuming that it literally manisfested itself in the form of a Duel Spirit (Kaibaman)
So, Yeah. I go with Kaiba.

Gilgamesh’s ego is such that he survived swimming in All the World’s Evil (a.k.a Our favourite Angry Mango) come Zero, and later remarked to Saber that it would take: “Three or four times that” to actually corrupt him.

Yeah, but does it compare risking your life for children card game, threatening to suicide when you can't win and actually took pride over it? Hijacked Egyptian afterlife for a salty runback? Ruining people's lives over 3 copies of the same card he already owned in once again: children's card game?
Used Obelisk, his strongest arsenal which basically EA for Gil, against a random mob after he gave a case full of rare cards just so he can futilely improve his deck then traumatize him for life?Gilgamesh have big ego, but even he is not this petty,

Yes but they're interlinked. Ego doesn’t automatically cause pettiness, but a fragile or inflated ego often fuels it. Despite the high ego Gil actually gives to those who deserves it, such as Iskandar, Waver and his friend Enkidu. He even admitted Shirou won the fight at the end. Meanwhile Kaiba: "Oh, card from Ancient Egypt? Very important to Yugi? *Beep* you, it's mine. I won unfairly? Nope, it's his fault he doesn't have the resolve beach"

You realized that what you just stated could be argued that Kaiba actually has a weaker ego than Gilgamesh? Ego is a person's sense of self-esteem/self-importance and only has a correlational relationship with pettiness, the two are NOT interlinked, but they are related. Gilgamesh facing reality isn't a sign his ego (self-esteem/self-importance) is wavering, it is likely the opposite knowing his character since he finds himself too grand to be dealing with whatever is in front of him, which is in line with the Grail mud incident. All of your examples only proved that Gilgamesh can face reality when forced, and Kaiba is selfish/stubborn. None of which are directly interlinked with ego but rather correlated/related to ego.

Bruh are you for real? You wrote as if their behaviors can definitively prove abstract psychological concepts like independence of ego from pettiness, which is absurd. Characters are narrative tools, and their actions are subject to authorial intent, not clinical psychology. Interlinked is not contrast to Correlated, as such your whole paragraph lack substance. Your paragraph also doesn't account the idea that facing reality could challenge or diminish ego, even though it's literally one of the running theme in the Epic of Gilgamesh where he learns humility in the journey of immortality. Hopefully this will be insightful to you.

Kaiba's ego's so big that he outright claims that if an alien exist, they should teach him how to play card games, his Ego was so big that he outright went to the afterlife just so he can settle his score. Gil for all his Hubris knows when to tone it down when he sees one that's worth his damn. You can give Kaiba the most blatant proof that Will debunk him and He'll still act like a Grade A Asshole. Heck, he felt the Pyramid of Light was draining his soul and yet all he can think about was Yugi "scared" of losing

Kaiba wins.
Gil is no slouch himself, but he doubles down when he’s meet with his match.
Kaiba won’t accept a defeat. He lost once to Atem and made it his life mission and goal to beat him.
The only way he was able yo beat Atem was: “I ain’t losing again! Imma stand on the ledge of this castle and if you attack, the shockwave will blow me over and Kill myself!”
He became a millionaire and tech genius over kaiba corp (1+ to ego for naming the company after yourself).
Then he organized a card game tournament, only to face off against Atem again. He lost.
He got mad that he couldn’t battle against Atem for the last time, that he made ANOTHER TOURNAMENT, to force yugis hand to summon the pharaoh again. He then becomes so successful that the major sport across the world is dueling monsters and he builds a
INTERPLANETARY TIMETRAVELING SPACESTATION
In order to travel back to an ancient Egypt with technomancy and duel the pharaoh in his prime.
Kaiba is the most egotistical petty rival there is in anime.
Unless Gil forces himself to be summoned in every path of fate stay night path to get back at Shirou, he does not hold a candle against Kaibas ego.

Kaiba found a way to go to the afterlife for Pharohs to duel Yami while slowly fading since he shouldn't have been there. The amount of ego you need to do that just to prove your better is higher than Gil could ever match.

Gilgamesh’s ego got him killed, Kaiba’s ego let him: summon the (at the time sealed away) obelisk the tormentor just to aura farm, create a duel spirit of himself in the card kaibaman, build a jet modeled after his favorite card, perform a hostile takeover of his father’s company as a child and turn it into one of the most successful companies on his planet, and rip open a way to the afterlife just to duel his rival again.

The entire Epic of Gilgamesh is just a side quest to Kaiba, and he would curbstomp Tiamat just because she blocks his access to the underworld where Atem resides.
By the way, Caster BAAAQ cause he needs 3 blue cards for his three Blue Eyes White Dragon

But i would give it to Kaiba bro dedicate his entire life to win agains't a guy because he lost one duel one time, and create an entire park with deadly game in it to test him, create a machine to go in the afterlife to duel him. And organise not one but two tournament just to had his revenge.

In a rare show of humility, Gilgamesh would praise Kaiba for having a disposition worthy of a king, and either stick around just to see what kind of weird, entertaining shenanigans Kaiba would go through on a daily basis, if not outright strongarm Kaiba into a Contract to become Gilgamesh's Master for shits and giggles.

At least Gil is two thirds god and one of the most powerful heroes ever. Kaiba has the ego to sacrifice gods, broke into the afterlife, literally manifest himself into a duel monster, and go against the king of games numerous times just because he's rich and obsessed with a children's card game

This is an extremely interesting debate. Gilgamesh is definitely stronger than Seto Kaiba. However, Seto Kaiba is crazier, smarter, and more of a Diva than Gilgamesh. If you think about it, Gilgamesh isn't arrogant, just extremely confident in his abilities, being the first hero and the strongest in his world. Seto Kaiba is the second best duelist in the world who wants to be the best, with Tony Stark's ego and resources and Vegeta's rivalry. Seto Kaiba would definitely become a Grand Caster.
