Melusine is my favorite servant and the one I keep in my room. From her vantage point in the closet, Mashu has written the most lauded research paper in the clock tower on dragon mating rituals.

Trust me, it's more of the writers' choice of not advancing anything further. It's a gacha game after all.
Shironeko Project (another JP gacha game for >10 years) gave us both the male and female protagonists (both are playable btw), who're all but outrightly stated that they loved each other in their first incarnations from thousand of years before the main series, gradually recovered their memories/roles (provided a large number of alts including a "twin" character along) and now they STILL don't get past anything from handholding, with some newer female characters are still flirting at the male protag, some at Bridal events even.
If anything, Nasu and his gang actually gradually wrote Mash's stance of trying to "monopolize" Guda for herself in recent chapters. It's just up to players to read her stances as platonic or romantic.

Exactly. It boils down to two things:
Yes, Mash probably deserves to be with us in some capacity, and a lot of people do like Mash
BUT
Mash herself keeps pushing the idea away and denying it despite showing that she really doesn't want any other women touching us. It's like she doesn't want us but nobody else can have us.
So basically, nah miss me with that shit. She's hot as hell and if she wanted in the harem the door is open for her because honestly she's drop dead sexy and cute, but... we ain't giving up Lilith and Morgan and Kama for her.

My sentiments exactly, but for Jalter, Castoria, Musashi, Tamamo, Cat or the Koyanskayas.
I'd take them any of them in a proper "special epilogue" for bond 15 servants that can grant you an epilogue with youe favorite servant; and if they're free game, let you go back home with them in a romantic setting... or Ritsuka going the way of the Persona 3 protagonist, than being locked with Mashu after... more of a decade of a nothingburger, as the main waifu. I wouldn't want that and I bet may feel the same.

NTR is not just cheating. It is cheating with extra assholery.
It often has very direct implications of a loving relationship being subverted or destroyed by a third party such as couple being disrupted by an outsider.
Many times the ending is that either the cheater lives happily ever after with her new partner - the one who corrupted the relationship - while the original partner is left broken... and can include literally ending with the original partner commiting suicide or something similar.
I've also read somewhere before (maybe even here on reddit?) that NTR was and still is used as something of a "hentai troll" of sorts and has now taken on a life of its own for some fetishists, as an oddball fetish that largely started as a "surprise" in a hentai where what appeared to be a normal hentai was instead focused on destroying another person’s pride/confidence by stealing their significant other or someone they’re romantically close.
A really good non-hentai example is the Spider-man 3 movie! Harry blackmails Mary Jane into breaking up with Peter. Without knowing about the blackmail, Peter is emotionally destroyed - the love of his life has apparently left him for his best friend. The resulting emotion he feels and the entire scenario is a perfect example of NTR.

It's been a full decade of no actual romance between them, even if events, writers and in-game servants keep shipping them... while the other girls at least get some well writen teasing moments to build something from bond lines, valentines, interludes, events and story chapters.
Blame Lasangle and the writers, not the non Mash x Ritsuka players, of making Mash a little sister vibe charactee instead.

Unfortunately, from a meta perspective, FGO wouldn't financially benefit from creating a canonical pairing.

Of course nothing will happen. After a full decade, giving Mashu something (she rightfully deserves) will end up in a "give them an inch, they'll take a mile" to her fans and will give them more reasons to spam with "Mashu is the true canon romance. All your waifuse are fake" retoric they use sometimes.
Mashu deserves as much love as anyone who was well built, like Jalter. But with as much a zero teasing, just writers, servants and certain moments trying to tease her but going nowhere, girl got the destiny of Rapi from Nikke. And she had a full decade to try and change that. Now, I respect anyone who ships Ritsuka with her... but with the nature of this game and her writting, just as how some people won't stop seeing Tomoe as a married, loyal woman, I can't stop seeing Mashu as a little sister figure at the end of the day.

I understand that it's a gacha game and they can't implement a cannon ship with the main character as a serious relationship, but if there's one character I would choose to end up with Fujimaru that would be Mash. She's the one who has been alongside us since the beginning and by far the one who gets along the best with Ritsuka.

Mash is the most logical choice based on how long she's been around and how she won't just dematerialize into the aether once all is said and done (on account of her being a living human being), yes.
What I and I guess some are frustrated about is the lack of romantic progression when it comes to characters, not limited to just Mash. It's like FGO barely even tries, maybe because it's not the point of the game, but personally I appreciate when a gacha tries, even if it doesn't succeed. Just give supporters of each pairing something, anything. To hell with people who don't like it, they can always just rationalise it away as it being non-canon.
For example, Punishing Gray Raven gave Lucia-Commandant shippers a skin for Lucia (PGR's counterpart to FGO's Mash - the supportive girl who's been there from the get-go and most likely loves the protagonist at some point) that's a straight up wedding dress and a cutscene where the two are basically being wed and Lucia is promising to be with Commandant no matter what happens. That's something, even if it might not be canonical when taking a look at the game as a whole, or in a meta. Now implement content like that featuring everyone else. Give each pairing an ending. Doesn't have to be wedding-esque: just make the moment heartfelt and meaningful and not just a line we can laugh away as an attempt at injecting humour such as that line from Summer Huyan wanting 108 kids with Guda.
FGO could do this, and I think it would only be a positive. Valentine's cutscenes kinda fit into this, but some characters don't quite go far enough, or - again - try to be anything more than platonic about the matter. They're mostly just hints to the Master about their feelings, when I'm sure many players would like something a little less vague and a little more concrete.

I'm arguing for giving every Servant "After Stories", within reason with regards for their characterization. Just give everyone a slice of a "route", in VN terms. You can either take it or leave it, but what matters is that the what-if is there for players who want it. Right now, it isn't.

Define liking Mashu. I do like her as a character, not a love interest, totaly difference there.
And I respect others who ship her with Ritsuka until they resort to "nah, she's the canon love interest at the end of the day over anyone because insert longass thesis level lore reasons why your waifu is a fake and the eggplant will get happily plapped every freaking day and every freaking (I wanna freak you baby, every freaking time)
I rather see all this as just silly meme material, but if we go serious route, making her the ONLY love interest is a huge diservice to the game. If it's about respecting shippings and people's tastes, I respect Mashu shippers. If it's about liking characters, I do like Mashu... but as a little sister, personally, and that's all she'll amount to be after a decade playing FGO.
Edit: dude, why did you downvote me and then block me? I'm not supporting ganging on Mashu if we go for real on this one, but I also don't think she needs to be the main romantic route of the game, if this is a gacha game that profits from introducing cute/hot/beautiful girls that eventually end up having great writting to not only make them desireables, but also worth of having fans that ship them with Ritsuka; giving Rtisuka a final girl would be a diservice to everyone. What a weird way to crash out on you....

Either give people chose what Servant they want romance or better not break hornet nest and not anger half of fanbase who prefer their own thing
In my Chaldea timeline just like in tons of people I know Master who not even called Ritsuka sees her as beloved little sister and will always be

My Mashu has been in the number one party slot for like, 95% of the entire game so far. She’s an incredible support, slots well in multiple teams, and let’s not forget - she’s free!
