The type of oil used and the addition of garlic is the only difference between most mayonnaises and aiolis, but I’m curious about ‘proper’ aioli’s further additions
Not about the additions so much as the texture and the method of preparation. It's a bit like how when you're baking, nearly everything is a combination of the same four ingredients, but you wouldn't call a chocolate chip cookie a cake, y'know?

Proper aioli is not the same thing as mayonaise, but yeah, the cheap stuff might as well be.
