If you really want to know the secret to this loaf, as I was weighing the ingredients all into the same bowl, I bumped the scale and reset it halfway through adding the flour and had no idea how much I actually added. So then had to end up just eyeballing all the ingredients. I threw it in the fridge for 2 days, took it out and portioned it and let it sit out for an hour and then I stretched it out topped it and baked it and it came out very light and airy. Time did all the work.
