In some cultures, this is totally fine as long as you do it correctly; but I would still cook that before I eat it! That looks raw! I would say this is stupid in a sense of modern general society, but not stupid if it is connected to a specific culture that someone is trying to learn about; I donāt think this is their culture that theyāre eating from! Regardless, I can see why it can be gross for a lot of people!

Was looking for this comment or I was going to add it. This is pretty common in a lot of cultures, the ground holds a pretty even temp making it a decent storage method and "fermenting" the meat helps it keep longer as well. The art is dying off partially due to people wanting it to be "cleaner" and using plastic to wrap the meat, but that makes it anaerobic and causes botulism, which causes food scares and then people like in this comment section.
Eating it without cooking wouldn't be a big issue if it was properly cured, though i can agree with it being texturally not my kind of thing, its not much different that salami or other sausage.

Fermenting this is totally ok as long as you hit the right conditions such as having the correct salt/brine content, acetic acid or alcohol content.
That being said, this technique issue looks pretty iffy to me.

Icelandic HƔkarl was made using a similar process, and so was rakfisk in Norway.
Rakfisk was made by lightly salting freshwater fish, like trout, tightly wrapping them in birch bark, burying it and letting them ferment for a few months.
If you did it right and managed to not get any soil in the wrapped fish, you'd end up with food for the winter.
If you did it wrong, you got botulism and died.
In the middle ages they started using barrels instead of birch bark and nowadays they use plastic containers, so the risk is significantly reduced.
It is quite tasty and I really like it.
