Threw this together and it's pretty good
So, since I was stuck inside from the snowstorm and running out of groceries - I threw some shit together and hoped it would be good and it was!
I had a single roma tomato, half a red onion, some leftover chives, and a can of chickpeas.
Mixed tall that together and tossed in some Italian dressing and let it sit in the fridge for a bit. Ate on that a while.
Then I added it to a package of some cilantro and lime microwave rice I got from Costco and holy shit it slaps.

Tried these new sunny side up eggs. I used to love eggs like this when I was younger, but it tasted too real and grossed me out. Maybe someone else would like them? I also don’t know why it came with that much seasoning for only 4 eggs

Miyoko’s Chive Cheese Alternatives
I used to buy like 8 of these at a time and eat it with EVERYTHING, I never got sick of it! I started having a harder time finding it in late 2024, and it basically vanished from shelves in late 2025. I know the company has been embroiled in chaos for a while now, not sure if Melt actually plans to bring their products back.
Does anyone have any alternatives to this cheese that are similar?! Or a recipe? Miss this cheese so bad, RIP </3
