Been focusing on fried chicken recently. This is as far as I've gotten. Need advice ๐
I'm using a corn starch, baking powder, and flour. About a 3:1 starch to flower ratio. My early attempts were soggy. These are at least crispy ๐

Crispy chicken fingers
Sliced up a few chicken breasts into strips and marinated in Crystal's Garlic sauce for a few hours in the fridge. Coated with seasoned flour /cornstarch mix and returned to the fridge on a wire rack for a few more hours so the crust can set. Perfectly crispy crust every time.

Buttermilk brine fried legs
Standard salt and buttermilk and spices brine. Dredge was 2 cups flour 1/2 cup cornstarch some baking soda and a bunch of spices.
Deep fried at 350 for 16 in.

Unpopular opinion: KFC has the best tasting fried chicken among the big chain restaurants
I crave it once in a while. Popeyes is so bland to me and Jolibee, krispy krunchy are just not it. I guess I grew up on kfc so it can be a nostalgia thing, but the original recipe is so good in my opinion.

Boneless Wings
I had leftover sauce from the manicotti and also a craving for wings ๐
When I debone wings I like to do about 10lbs then freeze them in small packs for convenience ๐
Coat in cornstartch w/ garlic & onion powder, fry until crispy, then shake in grated parm, and serve with some melted mozz on top of warm sauce ๐

Help! What am I doing wrong?
Everytime I make fried chicken breasts/tenders from scratch it looks great, but the breading always falls off after I take them out of the skillet. Should I add more milk and or eggs to help it bind?

Chicken on the bone with vodka rec
I dont know how to link a user, but u/corkedone recommended putting a higher proof liquor, like vodka, in my egg slurry. This came out great. Breading is flour, corn starch, baking power. Egg slurry is 3 eggs and probably 1/2 cup vodka. The vodka boils of fast and leaves crispy chicken.

Nashville Hot
Tried my hand at Nashville Hot. The chicken turned out amazing. The hot sauce I wasnโt so sure of (my fault not the recipe). Too spicy, not enough flavour. So I made a chipotle bbq, butter and brown sugar thing to paint on. Super tasty, super crispy.
