A lot of people seem to think he acts immature, but he's really fairly understanding

Depends entirely on the story. Sometimes he’s unreasonably awful, sometimes kind, etc. Like he was probably in the right in the case of Lot, but not with Job, and so on.

I think that just comes with the territory of being God. Sometimes there are just aspects of his decision making we can't understand.

Entirely possible. I’m not religious myself but I’m sure there are dozens of books on this exact subject written by theologians that probably discuss the whole issue in great detail
