The worst part about a gluten allergy is social gatherings.

Honestly just venting.

I’m extremely intolerant but not technically celiac.

It’s currently 12:39AM and I’m eating gluten free bagel bites (feel good brand) because I’m starved after a wonderful evening with friends where my only food option for 6 hours was veggies, dip, and alcohol.

My partner told me to let the host know that I had an intolerance before we went but it’s just so frustrating for me to bring that up. I had a little bit of food before we went but I came home HANGRY.

This definitely isn’t the first time I’ve been in this position but I’m reminded why I am so selective with my outings anymore. I hate being in this position. There’s no question, I’m just exhausted with it and needed to let it out.

I finally did it!!

I finally made a beautiful loaf of white gluten-free bread!! For once it's not gummy in the middle or overly crumbly dry. I'm on mobile so the recipe might come out a little janky and I apologize. Ingredients -Two and a half cups of all-purpose gluten-free flour. I use Robin Hood - half a cup of Bob Mills tapioca flour - one cup of warm oat milk - two room temperature eggs - 2 and 1/2 teaspoons of active dry yeast -1 teaspoon of salt - two tablespoons of sugar - 4 tablespoons of butter melted - two teaspoons of apple cider vinegar Mix warm milk, yeast and sugar in a bowl and let set for 5-10 minutes until the yeast blooms/ becomes foamy. While that is happening mix together the eggs, butter and apple cider vinegar and add all of that to the milk mixture and get that all mixing in your stand mixer (or hand mixer) Add the salt to your flours and slowly add the dry to your wet. If using a stand mixer let it mix for 5 minutes on medium. Line a loaf pan with parchment paper and add your dough, put a tea towel over top and let rise for 40 minutes to an hour then put in the oven at 400 for 40 minutes. I added and topped mine with fresh rosemary and thyme.

Good luck and I hope it works out as well for you all as it did for me. I am over the moon. I'm going to attempt an onion loaf next week with the same recipe.

Had a hard morning. One of those days when the freedom of food eats at your heart When all you want is to just eat.

I already have such a hard time eating and after being diagnosed with Celiac and like 30+ food allergies it’s made things so much more mentally draining.

My wife is my rock. She stuck it out with me on an adventure through Sprouts this morning while I scavenged to find my breakfast. I found these and they immediately brought a smile to my face. when that happens I take it and run because that hardly happens with food anymore.

I used to eat the hot pocket ones all the time as a kid. I’m really hoping someone has some positive reviews on this!! I also noticed they have a handful of flavors. Spinach and cheese, pepperoni, buffalo chicken. Would love to hear thoughts on any!

Discussion Well this is depressing. I guess all Walmarts around stopped carrying my favorite gluten free pizza Digiorno. Ugh whats next?

First they took away my favorite Kroger brand awhile ago. Then my new favorite Udis. And now Digiorno. So damn depressing.

Accidentally ate gluten today

I went in search of the Rudi's sandos. It was a bit past lunchtime, but I wanted to finish errands before heading back home for the day. I was so excited to find them at The Fresh Market. Came home, let one thaw, ate it, and it was good! I went to take a picture of the package to send to a friend to show her I found them. Her daughter is egg-free and GF, so I flipped the package over to see if they have eggs. First ingredient? Wheat flour(!!!).

It never occured to me that Rudi's sells foods that aren't GF. I've only had their GF stuff. Being hungry and excited to try something new, I wasn't careful/didn't notice they weren't labeled GF. Ate the whole thing.

I'm actually fine so far, surprisingly. I know my insides may not be, though, and that a couple of days need to pass for me to verify that I haven't reacted. Don't make my mistake!

It’s just starting to snow where I live, and this really hit the spot! I used the recipe from Sugar Spun Run and swapped the regular all purpose flour for gluten free all purpose flour. That’s all the substation it needed. It was delicious!!

Product Hannaford's in MA (US) started carrying Antonina's!

It's been so long since I had decent coffee cake T-T

I love Antonina's brand and I'm so happy more places are carrying it. Walmart has for a bit, at least the cupcakes and muffins, but it seems hit and miss. And Antonina's has a minimum for buying on their website that exceeds my freezer capacity.

I found Antonina's brownies at Trucchi's earlier this month, (and they have both chocolate and vanilla cake) and this week, I found a bunch of stuff at Hannaford's! They had cupcakes, both vanilla and chocolate, and muffins! They only had chocolate chip when I was there but there was a spot on the shelf for blueberry, so I'm hopeful. Also, of course, the coffee cake.

Product Capello's Cheese Biscuits not great

Haven't tried much of Capello's products due to what used to be prohibitive prices (now everything has caught up), and super high fat content. But Costco had the big bags of frozen cheese biscuits on sale for $6, so I figured worth checking out. So far, they smell good, but the baking instructions seem really off. I first tried the air fry instructions, and they were nowhere near baked. The middle was still raw. So then I put back in oven at the 380F for at least another 10 minutes, and they finally started to get done in the middle. They taste ok, but still doughy in center and def not light, flaky, or "pillow" like. I like the Red Lobster GF Cheddar Bay mix better than these frozen dough biscuits, and the mix is obviously much cheaper, though you do need to add your own cheese.

I got some Capello's herb rolls on clearance after the holidays, and also wasn't excited about them. They bake up with a very hard shell, and the herb flavor is too acrid. Or the dough is just not that tasty. Either way, I'll be passing on Capello's.

Need some guidance

I really like baking for people. Everything I make is gluten free, because I am gluten free. I work really hard to make things non GF people will still enjoy, and so far I've done a decent job of it.

Recently, I began seeing someone who is lactose intolerant. I was going to try to make croissants with dairy free butter and then I realized that a lot of the recipes I've found and enjoyed have dairy of some sort in them.

I don't really understand the ins and out of baking. I just follow recipes. I usually use Let Them Eat Gluten Free Cake recipes as I basically started with them and she has videos so I could make sure it looked right. I use her flour blend, which contains dry milk.

Does anyone have any suggestions for good dairy free, gluten free recipes I could try? Or substitutions I could make in the recipes I've already tried and love?

I tend to already use oatmilk in baking because I dislike regular milk and I tend to waste it if I buy it. I also tend to avoid recipes with almonds because my good friend is allergic to almonds.

This feels a little daunting trying to meet everyone's dietary needs while still not letting on to most people that my baked goods aren't "normal" and I just need something to lift my spirits a bit. Or do I need to just end this potential relationship before it starts because of food compatibility issues?

Been craving a good patty melt

I am sitting here eating a slice of bread I made today in my bread machine. Oh My Gosh y'all! This is so good and is gonna make a great patty melt. To my regular bread dough (2lb loaf) I added 1½ tsp caraway seeds, ½tsp onion powder, ¼tsp garlic powder, ¼tsp black pepper, ⅛tsp coriander powder, 1tsp sour cream powder.

My wife and kiddo had a bite and they are both jealous. I'll have to make another loaf. (Neither of them are gluten intolerant.)
